Tender and aromatic kofta meatballs simmered in a fragrant curry sauce, served alongside turmeric-roasted cauliflower and coconut lime rice. Ingredients For the Kofta Meatballs: 1 pound ground lamb or beef 1 small onion, grated 2 cloves garlic, minced 1-inch piece of ginger, grated 2 tablespoons chopped fresh cilantro 1 teaspoon ground cumin 1 teaspoon ground coriander 1/2 teaspoon garam masala 1/2 teaspoon paprika Salt and pepper to taste 2 tablespoons vegetable oil, for frying For the Curry Sauce: 2 tablespoons vegetable oil 1 onion, finely chopped 2 cloves garlic, minced 1-inch piece of ginger, minced 1 green chili, finely chopped 2 tomatoes, chopped 1 teaspoon ground cumin 1 teaspoon ground coriander 1/2 teaspoon turmeric powder 1/2 teaspoon paprika 1/2 teaspoon garam masala 1 cup coconut milk 1 cup vegetable or chicken broth Salt and pepper to taste Chopped fresh cilantro for garnish For the Turmeric Roasted Cauliflower: 1 head cauliflower, cut into florets 2 tablespoons olive oil 1 teaspoon ground turmeric 1/2 teaspoon ground cumin 1/2 teaspoon paprika Salt and black pepper to taste For the Coconut Lime Rice: 1 cup basmati rice 1 cup coconut milk 1 cup water Zest and juice of 1 lime 1 tablespoon coconut oil or butter 1/4 teaspoon salt Thanks for checking it out!
