Assamese Style Kaali Urad Dal | Traditional Tangy Dal with Elephant Apple Perfect to enjoy with hot steamed rice! 📝 Ingredients (for 4–5 people) 1 small bowl kaali urad dal Water (to soak and boil) Mustard oil – 2–3 tbsp Panch foran – 1 tsp Bay leaves – 2 Dry red chilli – 1 Crushed ginger – 1 inch piece Crushed garlic – 7–8 cloves 1 small onion, roughly chopped Green chillies – 1 or 2, split Smashed elephant apple (ou tenga) – ½ piece Turmeric powder – ¼ tsp Salt – to taste Fresh coriander leaves with stem 🍽️ Recipe Take 1 small bowl of kaali urad dal and wash it thoroughly. Soak it in water for 2 hours. After soaking, wash 3–4 times and remove half the skin. In a pressure cooker, add the dal and smashed elephant apple. Add water, salt, and a pinch of turmeric powder. Pressure cook it for 5–6 whistles. Heat mustard oil in a kadhai. Add bay leaves, dry red chilli, and panch foran. Now add chopped onion and crushed garlic. Fry the masala until golden and aromatic. Pour the boiled dal into the kadhai and mix well. Bring it to a boil. Now add crushed ginger and split green chillies. Boil for 5 more minutes. Add chopped fresh coriander leaves with stem.
