This curry pairs perfectly with steamed rice, buttery naan, or fresh rotis. Ingredients You’ll Need: Chicken: 500g (curry cut) Onions: 2 large (finely sliced) Tomatoes: 3 medium (pureed or chopped) Ginger-Garlic Paste: 1.5 tbsp Whole Spices: 1 cinnamon stick, 3 cardamom pods, 2 cloves, 1 bay leaf Powdered Spices: * 1 tsp Turmeric powder 1 tbsp Red chili powder (adjust to your spice level) 1 tbsp Coriander powder 1 tsp Garam masala Cooking Oil: 3-4 tbsp Garnish: Fresh coriander leaves and slit green chilies Cooking Instructions: Sauté Aromatics: Heat oil in a pan. Add the whole spices and let them sizzle. Add sliced onions and fry until they turn golden brown. The Base: Stir in the ginger-garlic paste and sauté for a minute until the raw smell disappears. Spices & Tomatoes: Add the tomato puree along with the turmeric, chili, and coriander powders. Cook until the oil starts to separate from the masala. Cook the Chicken: Add the chicken pieces and salt. Sear the chicken on high heat for 5 minutes until it changes color. Simmer: Add a cup of warm water, cover the lid, and let it simmer on low heat for 15-20 minutes or until the chicken is tender. Finishing Touch: Sprinkle garam masala and freshly chopped coriander.
