Vegan Cream of Broccoli Soup Ingredients: -1 Tbsp cooking oil -1 onion, diced -2 carrots, diced into 1/4" pieces -2 heads (about 1.5 lbs) of broccoli, divided and separated with stumps/stalks diced into 1/4" pieces and the heads chopped into bite-sized florets -4 cloves garlic, minced -1/2 tsp cumin -1 tsp kosher salt -4 cups vegetable broth -1 (14.5oz) can chickpeas, drained and rinsed -1/2 cup cashews -1/4 cup nutritional yeast -2 Tbsp red wine vinegar, divided -optional: black pepper and crushed red pepper flakes added to taste Directions: 1. Warm a large pot over medium-high heat. 2. Once hot, add oil to pot and warm this until it begins to shimmer. 3. Add diced onions, carrots, and broccoli stalks and sauté over medium heat for- 7-10 minutes until the vegetables are beginning to soften and the onions begin to turn translucent. 4. Add the broccoli florets along with the garlic, cumin, and salt and sauté this for another 7-10 minutes, allowing the broccoli to soften. 5. While the broccoli mixture is cooking, add the broth, chickpeas, cashews, and two ladlefuls of the broccoli mixture to the bucket of your blender and blend on high until smooth to make a "cream". 6. Add this cream to the pot of sautéed vegetables and bring to a light simmer. 7. Add the nutritional yeast and just 1 tablespoon of red wine vinegar to the pot and stir to combine. 8. Allow the soup to lightly simmer for about 20 minutes, stirring every 5 minutes or so, until the soup has thickened quite a bit. 9. Add the final tablespoon of red wine vinegar at the end of cooking, stir to combine, and simmer for 1-2 more minutes. 10. Season with black pepper or crushed red pepper flakes, and serve. --- Notes/tips -When making the cream in the blender, make sure to take the size of your blender into account. If you can't fit all of the broth with room to spare for the beans, nuts, and some of the broccoli mixture, just use 2 cups of broth and then use the final 2 cups of broth to rinse out the blender, or just add the remainder into the soup when you add the cream.
