Salmon with Thai Corn & Bean Salsa - Hot Thai Kitchen!

Thai-style corn and bean salsa is the perfect topping on any fish. Sweet corn, creamy beans, and tart and refreshing grapefruit go super well in the spicy dressing. It's healthy and gluten-free, this salsa recipe is versatile and such an easy recipe to make. I'm using salmon, but you can use any other fish you like. The flavour inspiration comes from a Thai green papaya salad or "som tum". You can even use the salsa to top a taco!
