Hope this helps somebody, since I just trashed part of my sanity for this. So basically for Unbegotten Knight you just do the heavy attack of your weapon all the time to cancel all his attacks, but one - the one where he screams (I think Ashes of War-ability) is not cancelable, so you gotta stop attacking and just run away or dodge, which is pretty difficult so just run. If you use a blood-loss weapon you can build up and if you´re lucky you can guard-break and get the blood-loss at the same time which deals tons of damage. But even if not you just do repeat until he is down. For Crucible Knight you use a weak-sword with the "Kick"-Ash of War. I have seen somewhere that it takes 2 kicks, but for me 1 kick worked every single time to break his guard. Then you change weapons and deal big damage. But really important is that you dont try to predict when his guard his up, since the more finishers you do the more his combo length varies - making it unpredictable when his guard is up. After he does the 2nd phase you just block the spearing-attack, which breaks your guard probably but you got time anyway. Then you just try to only dodge the attacks and you can repeat and finish him. Not sure if it will work first try, since the Unbegotten Knight does unpredictable stuff sometimes and jumps away too, so possible you have to dodge some of his attacks.
