Most infrared inductions have a heating coil or a halogen lamp that heats up the surface and then it transfers the heat to your utensils. Since the top gets actually heated, you can use any cookware that you normally would use on a normal gas stove. They come with digital panels to control heat intensity and power. Normal induction cooktops use electromagentic energy that generates heat in the actual cookware itself. Hence, you need cookware that is induction compatible (steel or iron) or special cookware that come with an induction base. These type of inductions are technically more better than the infrared ones in terms of performance. But in daily use, you will not even notice the difference.
