Few dishes can say they have as bloody and murderous of an origin story as mayonnaise. This is the story of Minorca, an island off of Spain, and the battle for its port of Mahon between the French and the English in the seven years war. 16,000 French soldiers invaded Minorca to attack fort st. Phillip and admiral John Byng was selected to go get the island back. Unfortunately, he was highly undermanned and outgunned. Since he did not have much of a choice, he engaged the French to a disastrous end. This led to his court martial and execution. To celebrate his naval victory, a banquet was to be held! The problem was there was no cream! Not one to be dissuaded, the French chef substituted oil for cream, adding in eggs, and a little bit of acid. Boom! Mayonnaise was made. At first Mahonesa, it became mayonnaise as the years went by. We will go over the traditional way to create mayonnaise here, and the history behind the origins of mayonnaise.
