In a large mixing bowl, combine pork, applesauce, maple syrup, garlic, sage, fennel seeds, paprika, sea salt, black pepper, and nutmeg. 2. Using a spatula or clean hands mix together all the ingredients until well combined. 3. Measure out 2 tablespoons worth of the mixture and using clean hands shape them into small patties. 4. Heat a large non-stick skillet over medium heat with avocado oil. 5. Carefully place the sausage patties in the hot pan, making sure not to overcrowd them. You may need to cook them in batches if your pan is not big enough. 6. Cook the patties for about 3-4 minutes on each side or until they are fully cooked through and nicely browned. 7. Let the patties cool slightly before serving. Hearty Beef Stew Recipe Ingredients: 1 lb stewing beef, cubed 1 tablespoon extra virgin olive oil 1 small onion, finely chopped 1–2 cloves garlic, minced 1–2 tablespoons tomato paste 1 cup mushrooms, chopped 2 carrots, chopped 1 celery stalk, chopped 1 cup red cabbage, finely chopped (optional) 1 tablespoon red wine vinegar 4 sprigs fresh thyme 1 dried bay leaf Sea salt and black pepper, to taste 2 cups beef bone broth, divided 1 cup filtered water 4 medium Yukon Gold potatoes, peeled and quartered (or substitute with celeriac root, or a mix of both) 1 cup frozen peas 1 tablespoon arrowroot powder Directions: 1. In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the beef and sear on all sides until browned. Remove the beef and set aside. 2. In the same pot, add the onion and tomato paste and sauté for 2–3 minutes until softened. Stir in the garlic and cook for another minute. Add mushrooms, carrots, celery, and optional red cabbage. Cook for 5 minutes, stirring occasionally. 3. Pour in the red wine vinegar to deglaze the pot, scraping up any browned bits. Return the beef to the pot. Add thyme, bay leaf, salt, and pepper. 4. Pour in bone broth and the filtered water. Stir in the potatoes. Bring to a boil, then reduce the heat to low. Cover and simmer for about 2 hours, or until the beef is tender and the potatoes are cooked through. 5. During the last 15 minutes ladle out 1/2 cup of broth from the stew into a small bowl, and whisk the arrowroot powder until smooth. Stir the mixture into the stew along with the peas and let it simmer uncovered for 15 minutes, until slightly thickened. 6. Remove thyme sprigs and bay leaf before serving and enjoy.
