Ingredients: whole egg 75g、granulated sugar 45g、honey 5g、cake flour 47g、almond powder 15g、cocoa powder 7g、baking powder 2.5g、unsalted butter 75g、dark chocolate 80g Mold size: 6-cup madeleine mold Make: 7-8 madeleines Instructions 1.Whisk 2 eggs and weigh out 75g whole egg mixture into a bowl, add 45g granulated sugar and mix roughly, then stir well with 5g honey. 2.Sift 47g cake flour、15g almond powder、7g cocoa powder、2.5g baking powder and stir evenly. 3.Then heat 75g unsalted butter to 50°C and pour into mixture to mix well until the batter feels like smooth and glossy. Put into a piping bag and refrigerate for 2 hours. 4.Take out the batter and fill 80%-90% with the batter into the middle of madeleine mold. 5.Preheat the oven to 200°C/392°F, then reduce to 180°C/356°F and bake for 10-12mins. Once baked, remove from the oven and let it cool. 6.Place 80g dark chocolate in a pot over hot water, heating until melted. Then reduce to 40°C-50°C. 7.Take out madeleine from the mold and clean clearly. Draw out 13g melted chocolate into the mold each time, then put in cooled madeleines and freeze for 15-20 mins until completely solid. 8.After that, turn over the mold and knock lightly.
