Ingredients: 400g Tofu (for pan-frying) 300g Celery 100g Cashew Nuts 2 Red Chili Peppers 1 tbsp Minced Garlic 5 tbsp Olive Oil (3 tbsp for pan-frying the tofu) 1/2 tbsp Salt 1 tbsp Korean Dark Soy Sauce (Jin Gan-jang) 1/4 tbsp Beef Stock Powder (Dashida) 1 tbsp Toasted Sesame Oil 💡 Important Note: Make sure to use Toasted Sesame Oil for that authentic nutty flavor. Regular sesame oil won't give you the same aroma! How-to: 1. Pat the tofu dry with paper towels (to prevent oil splattering) and slice it into cubes. 2. Wash the celery thoroughly and slice it diagonally. This increases the surface area so the seasoning soaks in better. Soak the celery in cold water for 10 minutes (to make it extra crunchy), then blanch it briefly (to weaken the strong scent). 3. Prepare the minced garlic. 4. Thinly slice the red chili pepper on a bias. 5. Toast the cashews over LOW heat until golden brown (to remove moisture and enhance crunchiness). 6. Sprinkle the tofu with a bit of salt and pan-fry on medium-low heat. Sear each of the 6 sides until they are golden brown and crispy (this prevents the tofu from breaking apart while stir-frying, adds a pleasant chewiness, and enhances the nutty flavor). Once done, set the tofu aside. 7. Add the minced garlic to a heated pan (sauté until the aroma releases). 8. Add the celery and stir-fry over medium heat. 9. Season with salt and Korean dark soy sauce(Jin Gan-jang). 10. Stir-fry for a few more seconds to let the flavors meld together. 11. Toss in the pan-fried tofu and sliced red chili pepper. 12. Add the beef stock powder (Dasida) to enhance the savory depth. 13. Drizzle with toasted sesame oil and stir-fry until everything is evenly coated. 14. Finally, add the toasted cashews and give it a quick toss on high heat for 10-20 seconds (adding them last keeps them incredibly crunchy and fresh).
