In a bowl, whisk together the egg yolks, sugar, milk, and cream. Set the bowl over a pot of simmering water to double boil the egg mixture until it reaches 75°C. This will kill any potential bacteria in the yolks. Next, add the vanilla extract. Let the mixture cool to room temperature in an ice bath and then freeze it overnight. Soak the raisins in the rum overnight, as well. The next day, remove the container from the freezer and check that the mixture is solid. Insert the container into the Ninja Creami, making sure it is locked in place. Choose the "Ice Cream" mode on the machine and start the blades. Let the machine work until a creamy result is produced. Once the ice cream is made, make a hole in it and add the drained rum raisins. Use the "Mix-In" setting on the machine to incorporate the raisins into the ice cream.
