Off the street, through an archway and behind an unassuming door, there is a staircase that leads to a vast, gorgeous medieval restaurant that has been owned by monks for 600 years and is currently being run by Sebastian, who shows us round, gives a little history and talks about what he has to do and why he loves his job.
