That iconic moment brought global attention to this humble yet deeply flavorful dish. Today, we’re recreating that same magic at home with juicy pork meatballs, pickled veggies, fresh herbs, and a tangy dipping sauce that ties it all together. Bun cha Hanoi is a quintessential Northern Vietnamese dish that originated in Hanoi and has become a cultural icon in its own right. At its core, it’s a vibrant and balanced meal that brings together smoky grilled pork, springy vermicelli noodles, fresh herbs, and a warm, sweet-savory dipping sauce that ties everything together. It’s street food at its finest—humble, satisfying, and endlessly flavorful. Traditionally, bun cha is made with two types of pork: savory grilled meatballs and thinly sliced pork belly, both marinated and charred over open flames. The grilled meat is served in a bowl of warm, tangy-sweet fish sauce broth, often topped with slivers of garlic and Thai chili for an added kick.
