Easy Mango Rice / Mango Pulao Recipe In a mortar and pestle, add garlic, ginger, and green chilli. Crush them into a fine paste. Heat 3 tablespoons of ghee in a pan. Once the ghee is hot, add 1 teaspoon of mustard seeds. Let them splutter. Then add the ginger-garlic-green chilli paste and sauté until it turns golden brown. Add finely chopped onions and sauté until soft and translucent. Add ripe mango pieces add jaggery powder , salt to taste, turmeric powder, chilli powder, and black pepper. Mix everything well. Cover with a lid and cook on low flame for 5 to 10 minutes until the mango becomes soft. Once cooked, mash the mango and onion mixture slightly using the back of a spoon or spatula. Add shredded jaggery or karipetti (as per your sweetness preference), and 3 tablespoons of curd (yoghurt). Mix well. Cover again and simmer for another 5 to 10 minutes. Open the lid—by now, you’ll see a beautiful, thick mango sauce. Add a splash of water if needed to loosen the mixture. Finally, add cooked rice (any variety) and mix gently until the sauce is evenly combined with the rice.
