If so coconut flour is one of the best alternatives for you. Coconut flour is gluten free and grain free. coconut flour cookies are definitely a healthy snack for any one who is on a diet. Let's start making this healthy coconut flour cookies and Lets #snackhealthy __________________________________________________________________________ Ingredients :- 300g of coconut flour ( Pol piti - පොල් පිටි ) 100g grams of Samaposha ( We used only 2 tbsps; you can add more if you prefer; this is optional actually) 80g of Atta / wheat flour 2 eggs 200g of Butter/ Margarin 200g of white/ brown sugar 1tbsp of baking powder 1tbsp of vanila 2 tbsp of sesame seeds (optional) ½ cup of milk Instructions:- 1. Beat sugar and butter until they form a creamy texture. 2. Add atta flour and baking powder. Fold the mixture. 3. Add two eggs and continue folding. 4. Add coconut flour ( Pol piti - පොල් පිටි ) and continue folding. You can add coconut flour in 2/3 batches if you like 5. Add vanilla and keep folding. 6. Add 2tbsp of samaposha. You can add more depending on the taste. 7. Now knead the mixture by hand. 8. Add milk gradually and knead the mixture until the mixture become less stiff. We have used around 8 tbsp of milk. 9. You can make a cookie and see if the dough/mixture is ready. If your cookies do not crack when you make the cookie, your dough is finely kneaded. 10. You can add in your sesame seeds at the stage if you like. Or you can put them on top of your cookies before baking. 11. Bake the cookies in oven. (200oC : - 30-45 minutes) (The time taken to bake depends on the type of your oven) 12. Cookies will change it colour to a dark brown when they are baked well. 13.
