(so back-heavy). Forgot to mention it in the video. The Wusthof Classic was one of the first knives I used when I started as an apprentice chef. I was using the Wusthof Classic without the full bolster. I did not fell in love with the Wusthof classic handle, but it took me a while to get comfortable with it. The improved Wusthof handle on the Ikon series is an improvement. However, the Wusthof Ikon handle is less noticeable with a pinch grip at the blade. It is slightly heavier than many knives of this size, so it will suit those who prefer the knife's heft to help when cutting. Personally, I find the asking price of $169 for the Wusthof Ikon very high for what it delivers. In Europe, this Wusthof Ikon cost 89 euro, and the Wusthof Classic with Bolser only cost 60 euro. 70 euro is the maximum I would pay for the Wusthof Ikon. Overall the Wusthof Classic and the Wusthof Ikon series is a knife that I highly recommend as your all-purpose knife if it wasn't for the high price tag.
