In this video, Captain Pedro tries to answer that question for everyone. How long do stone crab claws stay fresh on ice. If you were to check on Google, they state that stone crab claws which are already cooked, stay fresh on ice for 2-3 days but we see retailers with crab claws day after day on ice for sale for consumers. As a commercial stone crab fisherman, to us, fresh is the same day we catch it but the reality is that no consumer can actually know the date the stone crab claws they are purchasing were caught unless they purchase them directly from a fisherman. So we want to put this to the test and see how many days stone crab claws still taste fresh and smell fresh on ice. We pulled our commercial crab traps and separated claws right after cooking them on ice and we are going to eat one claw everyday and track the smell, taste and freshness of the crab claws to debunk the question of freshness and to determine how long they can stay fresh on ice. The stone crab claws that we are using for the test were not frozen stone crab claws, these were harvested from our commercial traps, cooked and chilled upon arriving to land. If you are wondering how to cook stone crab claws, we place them in boiling water for 10 minutes, then chill them in ice water for another 10 minutes, then the claws are individually rinsed and placed directly in ice. None of the crab claws are going to be cracked until we are going to eat them to ensure we follow food safety guidelines. We use a stone crab claw cracker but if you don’t have one, a wooden mallet or even a spoon will work. The key is that you want to hit it to crack the shell but not smash the delicate meat on the inside. The stone crab season currently runs from October 15th through May 1st each year so you can enjoy eating stone crab claws during this time. Outside of this time, the chance of the claws being previously frozen will increase. In Spanish, Stone Crab is called Cangrejo Moro. This is because they have a unique ability to regenerate their limbs and when the claws are correctly removed, the stone crab claws grow back! Stone crabs are caught via a stone crab trap that is baited and set on the ocean floor. There are many stone crab claw recipes but our favorite is to cook them, chill them, crack and eat them just like that.
