Making extracts at home is super easy and way cheaper than buying those tiny bottles at the grocery store. You can use most citrus fruits, vanilla beans, herbs, and nuts, too. Make sure to use an 80 proof or higher alcohol. The preferred liquors are vodka, rum, bourbon, or brandy. Vodka is used most often as it lets the flavor of the extracted item shine through without adding any of it's own. Spiced rum though, is a good choice for vanilla beans if you're looking for a caribbean flair. Homemade extracts also make lovely gifts. A rich vanilla extract can be quite pricey in the store so, your favorite baker would probably appreciate a half pint of the good stuff that you made yourself.
