Recipe Fluffy White Icing 3 egg whites- room temperature 3 cups granulated sugar 1 cup water 1 teaspoon cream of tartar Bring water and sugar to a gentle boil. Stir at the beginning so it doesn’t burn. Let boil gently for 8 minutes. Note: sugar burns easily so use a medium temperature but keep on a vigorous boil (as shown on video) At about the 5 minute mark, you’ll beat the egg whites until soft peaks. Add the cream of tartar. By 8 minutes, the sugar and water should not be completely watery, but also not look like it’s getting to the hard candy stage. If you keep it on a consistent low temp but vigorous boil the 8 minutes is exact. Once your sugar is ready, pour slowly into beaten egg whites and keep beating until a knife cut through the icing leaves a path. You’ll have a thick, gorgeous, fluffy icing that can be used for cakes, pies, on fruit, or by the spoonful if you have a serious sweet tooth! I hope you enjoyed this video! Thank you for watching!
