Here is the recipe: Red Wine Syrup: Pour 2 cups (480 ml) Red Wine into pot and simmer on low heat until volume is reduced in half (about 15 - 20 minutes for me) Add in 1.5x weight in sugar (about 12 oz or 360 g) Feel free to add in a splash of lemon juice for taste and brightness. Let cool and bottle. Red Wine Foam: (Helps if all ingredients are very cold) 5 oz (150 ml) Red Wine Syrup 2 Egg Whites 2 Dashes Sadistic Sakura Bitters Lightly mix together ingredients until frothy (this is to help break down the egg whites) Pour mixture into whipped cream dispenser. Charge dispenser with NO2 cartridge. Shake the dispenser to distribute the gasses and store in refrigator. Cocktail: 1.5 oz (45 ml) Noel's Potion Craft Gin 0.5 oz (15 ml) Applejack 0.5 oz (15 ml) Red Wine Syrup 0.75 oz (22.5 ml) Lemon Juice 2 Drops of Saline Solution Shake cocktail over ice for 10 - 15 seconds. Double strain cocktail into chilled Martini glass. Top cocktail with red wine foam. Drop a few drops of Sadistic Sakura bitters on top of the foam.
