Bbq Pulled Chicken & Sweet Potato Waffles Ingredients: 2 Chicken Breast 2 Sweet Potatoes 1/2 Red, Yellow or Orange Bell Pepper (diced) 1/2 Onion (diced) Bay Leaf (optional) Seasonings of choice (I used onion & garlic powder, black pepper) 1 cup Pancake/Waffle Mix 2 Tablespoons Cornstarch (if using pancake mix) 3/4 cup Milk 1/4 cup Water 1 Large Egg 2 Tablespoons + 2 Tablespoons Brown Sugar 1 teaspoon Cinnamon 1/4 teaspoon Nutmeg 2 Tablespoons Mustard 2 Tablespoons Apple Cider Vinegar 1/2-3/4 cup BBQ Sauce Preheat oven to 400 degrees F. In slow cooker add chicken breast, seasonings, bell peppers and onions with 1/4 cup of water turn to high heat. Let cook for about 3 hours until chicken is no longer pink on inside. Remove and shred chicken or chop into bite sized pieces and place back into slow cooker. Remove bay leaves add 2 Tablespoons of brown sugar, mustard, apple cider vinegar and bbq sauce mix together and let cook for another hour. Wash, dry and pierce sweet potatoes with fork and coat with vegetable oil before baking in oven for about 1- 1 1/2 hours. Once done when cool enough to handle scoop out inside into large bowl. Add to sweet potatoes the other 2 Tablespoons of brown sugar, nutmeg and cinnamon and mix well. Next add pancake/waffle mix, egg and mix until you get a pancake batter consistency. Let sit while heating up waffle iron once hot add batter and let cook until brown and crispy. Finally take waffle and place on plate and top with a generous amount of the bbq chicken (careful not to add too much sauce to make waffle mushy) and enjoy! #sweetpotato #bbqchicken #slowcooker #slowcookerrecipe #chickenandwaffles
