Learn How to make lasooni methi at your home For the paste Peanuts – 2 tablespoons Bengal gram (Chana dal) – 2 tablespoons Sesame seeds – 1 tablespoon Water – as required (for grinding) For the curry Fresh fenugreek leaves (Methi) – 2 bunches, washed and chopped Garlic – 10–12 cloves, finely chopped Onion – 1 medium, finely chopped Tomato puree – ½ cup Oil – 3 to 4 tablespoons (divided) Cumin seeds – 1 teaspoon Spice powders Turmeric powder – ½ teaspoon Red chilli powder – 1 teaspoon (adjust to taste) Coriander powder – 1½ teaspoons Garam masala – ½ teaspoon Salt – to taste For the second garlic tempering Oil – 1 tablespoon Garlic – 4–5 cloves, chopped Dry red chilli – 1 to 2 Step 1: Prepare the paste Dry roast peanuts, chana dal, and sesame seeds on low flame until lightly golden and aromatic. Let them cool slightly, then add water and grind into a smooth paste. Keep aside. Step 2: Cook garlic & methi Heat 1 tbsp oil in a pan. Add chopped garlic and sauté lightly. Add chopped methi and a little salt. Cook on medium to low heat for 2–3 minutes. Remove this mixture from the pan and keep aside. Step 3: Make the gravy In the same pan, heat 2 tbsp oil. Add cumin seeds and let them splutter. Add chopped onion and sauté for 2 minutes until soft. Add turmeric powder, red chilli powder, and coriander powder. Mix well. Add the prepared paste and cook until oil starts separating from the masala. Add tomato puree and a little water. Cook for 2–3 minutes. Step 4: Final cooking Add salt (adjust carefully). Add the cooked methi–garlic mixture. Add water as needed, mix well, and cover with a lid. Cook for a few minutes on low heat. Sprinkle garam masala and mix. Step 5: Second tadka (lasooni touch) Heat 1 tbsp oil in a small pan. Add chopped garlic and dry red chillies. Fry until garlic turns golden.
