Conch Chowder

This video/recipe represents my progressive approach to adulterating any traditions associated with conch chowder preparations. The addition of roasted mirepoix, clams, bacon lardoons, white wine and a variety of fresh chopped herbs helps to set this particular version aside from some of the hum drum versions that I've had. This version of conch chowder is a good example of why the traditional Bahamian versions of conch chowder do not necessarily provide any type of measuring stick for how they should be made. This one is delicious, light and very satisfying.
