Hi everyone, today’s video is baking cherry and almond cupcakes. Please try making them, they are so easy yet delicious. RECIPE: Ingredients: 5 oz self raising flour 1 oz cornflour 1 x tsp baking powder 6 oz sugar of choice 6 oz stork/margarine 3 eggs 2 oz ground almonds 1 x tsp vanilla essence 1 x tsp almond essence Almond flakes 1/4 cup of morello cherries cut into small pieces 50-60 mls of milk Method: Mix stork and sugar till light and fluffy. I used an electric whisk. Add eggs one at a time and mix till well incorporated. Add vanilla essence and almond essence. Sift flour, cornflour and baking powder into the mix, after taking a little out to coat the cherries. Add the ground almonds and mix well, then add the coated cherries. Add as much milk as needed to form a nice batter. Line the cupcake tin with cases and fill about 3/4 way up with the batter. Sprinkle the top with flaked almonds. Bake in a preheated oven at 160 C for approximately 20-25 mins, check with a skewer or toothpick, if it comes out clean the cupcakes are done. Enjoy with a nice cuppa.
