Japanese eels are a type of eel that are indigenous to Japan and are highly prized for their size and taste. They can grow up to more than one meter in length and are often used in traditional and modern dishes, as well as traditional medicine. The eel breeding process starts with catching eel seeds during the breeding season in estuaries where sea water carries them to shore. Due to decreasing catches every year and strict fishing regulations, these eel seeds are expensive, with young eels being priced at around 80 US Dollars. These "glass eels" are transparent in color and are then brought to the farm to be raised for about 12 months until they are large enough to be sold. Raising Japanese eels requires special care, and it is important to choose captivity with clean water and fresh air to minimize the risk of disease. One of the largest Japanese eel farms is "Yamada Suisan" in Kagoshima prefecture, which can cultivate up to 1000 tonnes per year in 5 adjacent eel farms. The farm does not use chemicals and antibiotics, so as to produce eel that is truly safe and of high quality. The eels are fed a mixture of fish meal, wheat flour, cake, soybeans, and fish oil twice a day at 4 am in the morning and 3.15 pm in the afternoon. Workers always prepare this food fresh, as it hardens quickly, making it difficult for the eels to eat. After one year, the eels are ready to be harvested. The harvesting process involves setting up nets and gathering the eels to the corner of the pond before attaching a hose and using a pump to suck them into a production room. Several workers then sort the eels by size, with each eel weighing around 200 grams. The eels that are still small in size are collected in the bottom basket and returned back to the pond, while those that weigh enough are weighed and given ice cubes to lull them to sleep during the delivery process. They are then used as a natural anesthetic so that the eels stay fresh while at the restaurant. The eels are cleaned of their internal organs and bones and then put through a series of machines, including a kiln that uses charcoal and hot steam, before being wrapped in airtight plastic and locked with a seal. Each box contains 25 eels, which can be consumed for the next few months without preservatives, as long as they are stored at minus 18 degrees Celsius.
