Instant Pot Mini (3qt) Toomba Stir-Fry Ramen with Veggies & Jammy Egg | Shin Ramyun | Dinner for One

#notsponsored I use my IP Mini (3qt) every week to meal prep components such as rice, beans, eggs, and so on. But it’s also the perfect size for solo meals and experiments. I found these new Nongshim Toomba noodles at Aldi a couple months ago and fell in love with them. Then they disappeared! But I found them again at my local Asian grocery market and wanted to make this video before they disappeared again! The first couple times, I cooked the noodles on the stovetop according to package instructions and simply added veggies with eggs cooked separately. I wanted to try doing everything in one pot so that it’s all done at the same time. After several experiments, this one came out the best and I’m very happy with it. Instead of having to think ahead to make a jammy egg, it cooks right along with the noodles for a one pot meal. And in case anyone is wondering, Steve does not eat anything ramen-related so this works perfectly for me as a meal for one. NOTES: • Noodles: These Toomba noodles are meant to be eaten as a stir-fry (without soup/broth). You can use this method for other similar packs such as Buldak which is super popular right now. • Trivet: You’ll need a trivet tall enough to leave ½ – 1” space between the noodles and egg. We want the egg to steam and not boil. The one I used in the video is rack that came with an accessory kit for the 3qt pot. The legs are approximately 1.9” tall. Here’s a link to the exact one if you want to check it out: https://amzn.to/3WaaJdL • Egg: Use a normal “large” egg and take it cold, straight from the fridge. I did rinse it quickly to wash off any residue on the shell, but it was still fridge-cold going into the pot. • Liquid: Plain water since I’m using the packets that came with the package. If you toss the packets, you can use something more flavorful like broth with soy sauce, fish sauce, or whatever you prefer. As far as quantity goes, 1.5 cups makes the perfect consistency for this recipe. Note that on the back of the Toomba package, there are two stovetop methods, one for boiling and draining (using more liquid) and one for boiling for full absorption (using less liquid). • Veggies: Pre-washed stir-fry mixes are great to have in the fridge. I buy a couple every other week to fill out meals. Look for mixes that have veggies you like. Broccoli, cabbage, peas, carrots, peppers, etc. • Toppings: The sky is the limit for toppings. I showed my usual suspects in the video, but you can explore so many other options. • 3qt vs 6qt Pot? Yes, you can make this exactly as written in a 6qt pot. I have not tested double the recipe (since Steve doesn’t eat ramen so I only make enough for myself), but I do believe that it would be easy to do so in a 6qt. Double the ingredients, making sure your trivet is tall enough to clear the noodles (maybe break the noodles in half to fit), and keep the cooking times the same. Oh, I almost forgot! There’s also the newly release 4qt pot that would work just fine, too. I would really like to have one, but I just can’t justify getting one unless my 3qt dies which doesn’t seem likely in the near future. Place the noodles into an unheated IP MINI or 6qt. Sprinkle the seasoning packet and squeeze the sauce over the top of the noodles. Squeeze Sriracha on top (if using). 2. Pour 1½ cups water into the pot. 3. Place the trivet over the noodles and place the egg in the center of the trivet. 4. Lock and seal the lid and cook on high for 3 minutes followed by a quick pressure release. 5. Place the egg into a cup with ice and water until cool enough to handle (about 2-3 minutes). Remove the trivet from the pot. 6. Add fresh stir-fry vegetables to the noodles and stir to coat. Cover loosely for about 2-3 minutes to soften the veggies slightly. 7. Peel the egg and slice in half. 8. Pour noodles and veggies into a serving bowl.
