2 lbs chicken (cut into pieces) 2 tbsp Jamaican curry powder 1 tsp all-purpose seasoning 1 tsp salt ½ tsp black pepper ½ tsp thyme (dried or fresh) 1 tsp paprika (optional) 3 cloves garlic (minced) 1 medium onion (chopped) 2 stalks scallion (chopped) 1 medium carrot (sliced) 1 large potato (cubed) ½ scotch bonnet pepper (finely chopped, remove seeds for less heat) 1 tbsp ginger (grated) 1 ½ cups water or chicken broth 2 tbsp vegetable oil ½ tsp pimento (allspice) 1 tbsp vinegar (for cleaning chicken) 1 tsp browning (optional, for added color) 1. Prepare the Chicken Wash chicken with vinegar and water, then drain. Season with curry powder, all-purpose seasoning, salt, black pepper, thyme, paprika, garlic, onion, scallion, pimento, and ginger. Mix well and let it marinate for at least 1 hour (overnight for deeper flavor). 2. Cooking the Curry Chicken Heat oil in a large pot over medium heat. Add 1 tsp of curry powder to the oil and "burn" it for about 30 seconds (this enhances the flavor). Add seasoned chicken to the pot and stir to coat with the curry. Let it sear for about 5 minutes. 3. Simmering the Curry Pour in water or chicken broth, ensuring the chicken is partially covered. Cover and let simmer for 30 minutes on medium-low heat. Stir occasionally. 4. Adding Vegetables Add potatoes, carrots, and scotch bonnet pepper. Stir well. Simmer for another 15–20 minutes or until potatoes are soft and the sauce thickens. 5. Final Touches Taste and adjust seasoning if needed. Add more water if the sauce is too thick. Remove from heat and let rest for 5 minutes before serving.
