Rawa Dosa is a popular South Indian breakfast dish made from semolina (also known as rawa or sooji) and rice flour, giving it a crisp texture and light flavor. It's often served with coconut chutney and sambar. Here’s a simple recipe to make Rawa Dosa: Ingredients: 1 cup semolina (rawa/sooji) 1/4 cup rice flour 1/4 cup all-purpose flour (optional, for crispiness) 1/2 teaspoon baking soda (for crispiness, optional) 1/4 teaspoon turmeric powder (for color) 1/2 teaspoon cumin seeds 1/4 teaspoon black pepper 1-2 green chilies, finely chopped 1 tablespoon ginger, finely chopped 1 small onion, finely chopped (optional) 1 tablespoon curry leaves, chopped 1/4 cup chopped coriander leaves Salt, to taste Water, as needed (to make a thin batter) Oil (for frying) Instructions: Prepare the Batter: In a large mixing bowl, combine semolina, rice flour, all-purpose flour (if using), baking soda, turmeric powder, cumin seeds, black pepper, and salt. Add chopped green chilies, ginger, onion, curry leaves, and coriander leaves to the dry ingredients. Gradually add water to make a thin, watery batter. It should be pourable but not too thick (almost like the consistency of buttermilk). Let the batter rest for about 15–20 minutes. The semolina will absorb some water and thicken slightly. Cooking the Dosa: Heat a non-stick or cast-iron pan on medium heat. Once hot, drizzle a little oil. Stir the batter well before pouring it onto the hot pan, as the semolina tends to settle at the bottom. Pour a ladle of batter onto the pan in a circular motion, starting from the outer edge and working your way inward. The dosa will spread out thinly. Drizzle a little oil around the edges and on top of the dosa. Let it cook for 2–3 minutes until the edges turn golden brown and crispy. Once the underside is crisp, flip the dosa over and cook for another 1–2 minutes. If you prefer a crispy dosa, you can skip the flipping step and just cook the dosa until it’s golden and crisp on one side. Serving: Remove the dosa from the pan and serve immediately with coconut chutney and sambar. Tips: The batter should be thin for a crispy texture, so add water accordingly. You can make the dosa without flipping it, letting it cook crisp on one side. If you like a spicier dosa, you can add chopped green chilies or even red chili powder to the batter.
