Koofteh Tabrizi (Persian Meatball Dish) A traditional and hearty dish from Tabriz, Iran, Koofteh Tabrizi is a flavorful stuffed meatball recipe, often served with bread. Ingredients: For the Meatball Mixture: 1 cup split peas 1 cup rice 800g mince beef (10% fat) 1 large egg 1 bunch fresh tarragon, finely chopped 300g fresh basil, finely chopped 3 green onions, finely chopped 2 onions, grated (excess water removed) Salt, turmeric, and chili flakes to taste For the Filling: Walnuts Black plums Barberries Fried onions (2 onions sliced and browned in oil) For the Sauce: 1 diced onion 3 tbsp tomato paste Turmeric, chilli flakes, and dried sage to taste Salt to taste Boiling water (to fill about 1/4 of the pot) A handful of barberries (for garnish at the end) --- Introduction: Step 1: Prepare the Meatball Mixture 1. Cook Split Peas: Boil the split peas in water until half-cooked, drain, and grind in a food processor. 2. Cook Rice: Boil 1 cup of rice in salted, oiled water for 10 minutes, drain, and grind in a food processor. 3. Combine Ingredients: In a large bowl, combine split peas, rice, ground beef, egg, and chopped herbs (tarragon, basil, green onions). 4. Add Seasoning: Add salt, turmeric, and chili flakes to taste. Mix well and knead thoroughly. 5. Add Grated Onion: Mix in grated onion, ensuring all ingredients are well incorporated. 6. Rest: Cover the mixture with plastic wrap and let it rest in the fridge for 20 minutes. Step 2: Shape the Meatballs 1. Take a large handful of the meat mixture, knead it, and flatten it in the palm of your hand. 2. Place a bit of the filling (walnuts, black plums, barberries, and fried onions) in the center. 3. Close the edges, removing any air, and shape into a round ball. Repeat for all meatballs. 4. Cover and chill for another 10 minutes. Step 3: Prepare the Sauce 1. Sauté Onions: In a pot, add oil to the diced onions and sauté until golden brown. 2. Add Tomato Paste: Stir in 3 tbsp of tomato paste and cook until the raw taste is gone. 3. Add Spices: One by one, add turmeric, red pepper, and dried sage, stirring each time. 4. Add Water: Pour boiling water into the pot until it fills about 1/4 of the pot. 5. Let the sauce boil for 2 minutes. Step 4: Cook the Meatballs 1. Gently add the meatballs to the pot and spoon some sauce over them. 2. Cook uncovered over medium heat for 10 minutes to help set the meatballs. 3. Then, cover the pot and cook on low heat for 50 minutes. Step 5: Final Touch 1.
