Crispy on the outside and soft, flavourful inside — these Egg-Potato Fritters are the ultimate comfort snack for any occasion. Bursting with the goodness of boiled potatoes, protein-rich eggs, and an aromatic mix of roasted spices, these fritters bring together the warmth of home-cooked Indian flavours with a modern, crispy twist. Perfect as a tea-time treat, party starter, or a quick evening bite, this recipe is easy to prepare and absolutely delicious. Ingredients: For the spice mix (masala): 1 tsp cumin seeds 1 tsp coriander seeds 2 dry red chillies For the fritters: 3–4 medium-sized potatoes (boiled) 3 boiled eggs 1 raw egg (for binding) 1 small capsicum, finely chopped 1 medium onion, finely chopped 1 small tomato, finely chopped 2–3 green chillies, finely chopped 1 tsp chopped ginger 2 tbsp chopped coriander leaves 2 tbsp sattu (roasted gram flour) ½ tsp garam masala ½ tsp oregano ½ tsp red chilli flakes ½ tsp chaat masala ½ tsp peri peri masala 1 tbsp green chilli sauce 2–3 tbsp breadcrumbs (for texture and binding) Salt to taste Oil for deep frying Instructions: Step 1: Boil and prepare the potatoes Start by boiling the potatoes until soft. Once done, peel them and keep aside to cool. Step 2: Prepare the spice mix In a pan, dry roast cumin seeds, coriander seeds, and dry red chillies over medium flame until fragrant. Allow them to cool completely, then grind them into a fine powder. This homemade masala will give your fritters a deep, earthy aroma and a punch of traditional flavour. Step 3: Dry roast sattu In the same pan, dry roast sattu for 2–3 minutes on low flame until it turns slightly golden and aromatic. Set it aside to cool. This adds a nutty taste and also helps in binding the fritter mixture. Step 4: Mash and mix In a large mixing bowl, add the boiled eggs and mash them well using a fork or masher. Then add the boiled potatoes and mash together until smooth and well combined. Now, add chopped capsicum, onion, tomato, green chillies, ginger, and coriander leaves. Mix lightly to distribute the ingredients evenly. Step 5: Add the spices and flavours To this mixture, add the prepared roasted spice powder, garam masala, oregano, red chilli flakes, chaat masala, and peri peri masala. Then, add dry roasted sattu, green chilli sauce, breadcrumbs, salt, and finally crack in one raw egg for binding. Mix everything thoroughly using your hands or a spoon until all ingredients come together into a soft, mouldable dough. Adjust breadcrumbs if needed to achieve the right consistency — it should hold shape easily without sticking to your hands. Step 6: Shape into fritters Grease your palms with a little oil and form small, round balls or fritters from the mixture. Make sure they are smooth and firm so they don’t break while frying. Step 7: Deep fry till crispy Heat oil in a deep frying pan over medium heat. Once the oil is hot, gently slide in the prepared fritters. Fry them in batches — do not overcrowd the pan. Fry until they turn golden brown and crispy, flipping occasionally for even cooking. Once done, remove them onto absorbent paper to drain excess oil. Step 8: Serve hot Serve the Crispy Egg-Potato Fritters hot with tomato sauce, green chutney, or your favourite dip. Pair them with a cup of tea or coffee for the perfect evening indulgence. Tips & Variations: For extra crunch, roll the fritters in dry breadcrumbs before frying. You can replace sattu with roasted gram flour (besan) if unavailable. Add grated cheese for a cheesy version of the fritters. To make them healthier, you can air-fry or bake them at 180°C until golden and crisp.
