Oh boy! These dumplings would be a great appetizer or as soup or stew! Here's how we made ours; INGREDIENTS: -4-6 slices of bacon (save a few for garnish) -2 cups of all purpose flour -Dash of salt -1 1/2 Tbsp baking powder -1 Tsp dry parsley flakes -2 eggs -1/4 cup of milk -1 quart of vegetable broth -Dash of pepper -Parsley sprig or two INSTRUCTIONS: -Fry your bacon, remove and let drain on a paper towel. Reserve the bacon drippings! -Take a bowl and sift the flour, salt and baking powder. -In a measuring cup, beat the two eggs. Then add the milk. -Stir the egg/milk mixture and the bacon drippings into the flour. -Blend and add the crumbled bacon. If the mixture gets too dry, it's ok to add more milk. -Pour the vegetable broth into a pan and let it come up almost to a boil. -Drop SMALL scoops of the dough into the broth.(They will expand a lot!) -Cover and let simmer on med-low heat in the broth for about 12 minutes or until done. -When done, scoop the dumplings into a bowl. For more of a soup you can transfer more of the broth into the bowl. -Garnish with chopped fresh parsley and more bacon bits! -Serve and enjoy!
