Madeleine is a French tea cake with a shape of a scallop shell. It is a delicate little butter cake perfect for afternoon tea. To subscribe: / @dessertalchemy ------------------------------------------------------------------------------------------- Lemon Madeleine Unsalted butter (melted) 100g Egg 100g Granulated sugar 80g Salt A generous pinch Honey 12g Vanilla extract 2g Cake flour 100g Almond flour 20g Baking powder 4g Lemon Juice 20g Lemon zest 1 lemon 1. Add eggs and granulated sugar to a bowl, mix well. 2. Add honey and vanilla extract, mix well. 3. Sift cake flour, almond flour, baking powder and salt into egg mixture, mix till combined. 4. Add melted butter and mix well. 5. Add lemon juice and zest, mix well. 6. Cover the bowl with cling wrap and refrigerate for at least 1 hour or overnight. 7. Preheat oven to 180 degree Celsius. 8. Grease the madeleine pan with unsalted butter and coat it with flour. 9. Remove batter from fridge and stir the mixture with a spatula. Transfer the mixture to a piping bag. 10. Pipe the batter into the pan and bake at 180 degree Celsius for 10-15 minutes. 11. Remove from oven and leave them in the pan for 10 minutes. 12. Flip the Madeleines and leave them in the pan, let them cool down completely. --------------------------------------------------------------------------------------------- 柠檬玛德琳 无盐黄油(融化) 100g 全蛋 100g 细砂糖 80g 盐 一撮 蜂蜜 12g 香草精 2g 低筋面粉 100g 杏仁粉 20g 泡打粉 4g 柠檬汁 20g 柠檬屑 1个 1. 把鸡蛋和细砂糖加入盆里,搅拌均匀。 2. 加入蜂蜜和香草精,搅拌均匀。 3. 面粉,杏仁粉,泡打粉和盐过筛加入蛋液里,搅拌至均匀。 4. 加入融化的黄油,搅拌均匀。 5. 加入柠檬汁和柠檬屑,搅拌均匀。 6. 用保鲜膜把盆包好,放入冰箱冷藏至少一小时或隔夜。 7. 烤箱预热180摄氏度。 8. 马德里模具涂上黄油,撒上面粉。 9. 从冰箱取出,用刮刀稍微搅拌面糊,倒入裱花袋里。 10. 把面糊挤到模具里,放入提前预热的烤箱,180摄氏度烤10-15分钟。 11. 从烤箱取出,不脱模晾10分钟。 12. 翻面,晾至完全冷却。 ------------------------------------------------------------------------------------------ This video has been uploaded to my YouTube channel only.
