Cross Country Road Trip Food: Vegan Road Trip, Mostly Shelf-Stable, Easy On-the-Go Food

This is the basics of our food for our road trip from Phoenix to Vermont! We dropped our son in DC and then continued on to visit Adam's mom in Vermont. Our trip totaled over 3,500 miles! This was an interesting trip in that we did rent a vehicle and then we flew home. I didn't have to plan too hard on being exact with the food because we could leave the extra at the end of our journey (which we did). We left only a few cans of beans, a couple of packs of Ezekiel tortillas, and one jug of water. (I guess it's good we didn't take as much water as I originally wanted to take.) I focused heavily on shelf stable foods, which wasn't difficult being a vegan family. This included some of our staples such as canned beans and shelf stable one quart size plant milks.
