Separate the eggs into yolks and whites. Add the egg yolks to a medium bowl and beat until very light. Add sugar, lemon juice, salt, hot water, and lemon zest. Cook in a double boiler until it begins to thicken. Whip egg whites stiff and fold into the egg yolk mixture after letting the mixture cool. Pour into a pastry shell and bake in a moderate oven (350ºF) for 22 to 25 minutes or until brown. Allow to cool and refrigerate overnight. Notes: Be careful to add no more than 1/2 cup of lemon juice. If you are using a butter crust, make sure it is par-baked and that the bottom is fully cooked.
