#马来甜辣鸡# #Ayam Masak Merah# 材料/ Ingredients: 3只-鸡腿 (洗净斩块) 3 pieces - chicken legs (wash and cut into pieces) 腌料/Marinade: 2小匙-盐 4小匙-黄姜粉 2 tsp - salt 4 tsp - turmeric powder 辣椒糊材料/Ingredients for chili paste: 1小块-姜 (切小块) 6粒-小葱头 (切半) 7粒-蒜头(切半) 1/2粒-洋葱(切碎) 15条-辣椒干 (先浸温水泡软、剪小块) 50mI-水 把全部材料放入搅拌机里搅拌成糊状、备用. 1 small piece - ginger (cut into small pieces) 6 pieces - shallots (cut in half) 7 pieces - garlic (cut in half) 1/2 piece - onion (chopped) 15 pieces - dried chili peppers (soak in warm water first Soak until soft and cut into small pieces) 50mI-water. Put all the ingredients into a blender and stir into a paste. Set aside. 调味料/Seasoning: 2大匙-番茄酱 1大匙-辣椒酱 1大匙-糖 1小匙-盐 1大匙-蚝油 150ml-水 1/2粒-洋葱(切圈) 2 tbsp - tomato 1 tbsp- chili sauce 1 tbsp - sugar 1 tsp - salt 1 tbsp - oyster sauce 150ml - water 1/2 onion (cut into rings) 把全部调味料倒入碗里搅拌均匀备用 Pour all the seasonings into a bowl and mix well and set aside 做法/Method: 1)鸡肉块加入腌料拌匀,腌渍1小时. 2) 烧热油把鸡肉块放入锅内炸至金黄色至8分熟捞起沥干油份备用。 3) 锅里放入油,把辣椒糊倒入爆香炒至出油。 4) 倒入拌好的调味料煮至浓稠. 5) 倒入炸好鸡块与半粒洋葱拌炒均匀至稍微收汁即可上碟。 1) Add the marinade to the chicken pieces, mix well, and marinate for 1 hour. 2) Heat oil, put the chicken pieces into the pot and fry until golden brown, until 8 minutes done. Drain the oil and set aside. 3) Add oil to the pot, add chili paste and stir-fry until oil comes out. 4) Pour in the seasoning mixture and cook until thickened. 5) Pour in the fried chicken pieces and half of the onion, stir-fry evenly until the juice is reduced slightly and serve on a plate.
