I have been digging and cooking bamboo shoots for over 30 years. I dig so many bamboo shoots every year that it was really hard to boil them all. From my experience, I have found the most efficient way. It is an extremely simple method: peel the bamboo shoots and heat them from water. In Japan, it is conventionally said that bamboo shoots must be boiled with the skin on for at least one hour with rice bran. In reality, however, the bamboo shoot skin inhibits the reduction of the scum and prevents the bamboo shoots from becoming tender. Therefore, many Japanese have mistakenly believed that it is very difficult to boil bamboo shoots by themselves. But the truth is that anyone can eat delicious bamboo shoots in a much simpler way.
