It also has 42 mg of potassium, 2.4 mg of sodium, and 13 grams of total carbohydrates. 6) Once opened, pure maple syrup lasts for about a year. After that, it may begin to grow mold. 7) Maple syrup has a Glycemic Load of 10, which is equivalent to honey. Its Glycemic Index is 54, which is slightly lower than honey. 8) Maple syrup is vegan!
