(1) Lahori Dahi Bhallay Recipe By Student Cooking: INGREDIENTS FOR ASSEMBLING: .CHICKPEAS = 2 CUPS (I have taken 2 cups of chickpea, then soak the chickpeas overnight ,In next morning boil it with 1/2 tsp of baking soda). .YOGURT = 1/2 KG (I HAVE TAKEN 1/2 KG YOGURT WHIPPED WITH 1/2 TSP SALT ). .ALOO = 4 (I HAVE TAKEN 4 MEDIUM SIZE POTATOES , AND BOIL THEMT WITH 1/4 TSP ZARDA COLOUR THEN CUT INTO FINE SLICESE) .FRESH CORIANDER LEAVES = 1/4 CUP (FINE CHOP) .ONION = 2 (FINE CHOP) .TOMATOES = 2 (FINE CHOP) .CHAAT MASALA = AS REQUIRED .HOMEMADE CHAAT MASALA FOR DAHI BARAY = AS REQUIRED .CRUSHED RED CHILLI = AS REQUIRED INGREDIENTS FOR GREEN CHUTNEY : .CORIANDER LEAVES = 1 BUNCH .MINT LEAVES = 1/2 BUNCH .GREEN CHILLI = 5 -6 .WHITE CUMIN SEEDS = 1 TSP .SALT = 1/2 TSP .GARLIC CLOVES = 7 - 8 .WATER = 1/2 (In grinder jug add all green chutney ingredients and grind it until well combined ). INGREDIENTS FOR APRICOT CHUTNEY: .APRICOT = 250 GRAMS (I have taken apricot 250 grams , wash and soak into to the water for about 2 hours). .GUR (JAGGERY) = 1/2 CUP .RED CHILLI POWDER = 1 TSP .SALT = 1/2 TSP .CHAAT MASALA POWDER = 1 TSP .RED FOOD COLOUR = 1/4 TSP .WHITE CUMIN SEEDS = 1- 1/2 TSP ROASTED (In saucepan add soaked apricot along with water ,then add all ingredients of this chutney and cook on medium low flame for about 7 - 8 minutes then turn off the flame and cool it down then grind it until well combined). INGREDIENTS FOR IMILI KI MEETHI CHUTNEY: .GUR (JAGGERY) = 1/2 CUP .TAMARIND PASTE = 1 CUP .RED CHILLI POWDER = 2 TSP .CUMIN SEEDS = 1- 1/2 TSP (ROASTED AND CRUSHED) .SALT = 1 TSP .DRIED GINGER POWDER (SONTH POWDER) = 1 -1/2 TSP .AJWAIN = 1/4 Tsp (In saucepan add all ingredients and cook on medium low for about 5 minutes then turn off the flame and cool it down) . INGREDIENTS FOR PAPRI: .MAIDA = 2 CUP .OIL = 2TBSP .WHITE CUMIN SEEDS = 1/2 TSP .SALT = 1/2 TSP .WATER = AS REQUIRED INGREDIENTS FOR BHALLAY: .BESAN = 2 CUP .BAKING SODA = 1/2 TSP .SALT = 1/2 TSP .RED CHILLI POWDER = 1/2 .WATER = AS REQUIRED (2) Aloo pakora lPalak Pakora Recipe: INGREDIENTS : .POTATO = 3 (MEDIUM SIZE ,PEEL THE POTATO AND CUT INTO ROUND SLICES ,DEEP THE POTATO SLICES INTO THE WATER) .SPINACH LEAVES = 10 - 12 (WASHED AND DRIED THE SPINACH LEAVES) .GRAM FLOUR = 1 CUP .BAKING SODA = 1/2 TSP .SALT = 1 TSP OR TO TASTE .RED CHILLI POWDER = 1 TSP OR TO TASTE .WATER AS REQUIRED FOR MAKING THE BATTER OF PAKORA .OIL FOR DEEP FRYING (3) Pyaz Ke Pakore|Pakora Recipe: Ingredients : .Onion = 3 medium ( cut into slice) .Salt = 1 tsp .Fresh coriander = 1/4 bunch fine chop .Baking soda = 1 tsp .Red chilli = 1tsp .Zarda colour = 1/ 4 tsp .Green chillies = 3 -4 fine chop .White cumin seeds = 1tsp ( curshed) .Coriander seeds = 1 tsp (curshed) .Water as requried .Oil for deep frying (4) Aloo Kay Samosay: Ingredients for dough : .Maida = 2 cup .Ghee = 6 tbsp ( melted ) .White cumin seed = 1 tsp .Salt = 1 tsp .Water as required _ Ingredients for Filling: .Aloo = 1/2 kg ( boiled and mashed ) .Oil = 3 -4 tbsp .Ginger paste = 1 tsp .Garlic paste = 1 tsp .Green chili = 7 - 8 crushed .Coriander seeds = 3 tsp ( crushed ) .White cumin seeds = 1 tsp .Crushed red chili = 1 tsp .Red chili powder = 1 tsp .Turmeric powder = 1/2 tsp ( heaped ) .Salt = 1 tsp .Fresh coriander = 1/2 bunch ( fine chop ) (5) Crispy Thread Chicken: Ingredients: .Chicken boneless = 1/2 kg (cut into strips) .Egg = 1 .Chilli sauce = 1 tbsp (heaped) .Soya sauce = 1 tbsp (heaped) .Chilli garlic sauce = 2 tbsp .Ginger paste = 1 tsp .Garlic paste = 1 tsp .Maida = 2 tbsp .Corn flour = 2 tbsp .Chicken powder =2 tsp .Mustard powder = 1/2 tsp or you can use mustard paste .Zarda colour = 1/4 tsp .Salt = 1/2 tsp .Black pepper powder = 1 tsp .Red chilli powder = 1 tsp .Manda patti /Samosa sheets 2 - 3 packets or as required .Cooking oil for frying (6) Besan Ke Dahi Bade: Ingredients: .yogurt = 750 grams or 3 cups .White cumin seeds = 1/2 tbsp( roasted and crushed ) .Salt = 1 tsp . Garlic paste = 1 tbsp .Milk = 2 cups or you can add water _ Ingredients for pakora : .Besan = 2 cups .Onion = 3 medium ( cut into slice) .Garlic paste = 2 tsp . Salt = 1 tsp .Baking soda = 1 tsp .
