The Ingredients for your Homemade Taipo/Typo/Thypo recipe: For the Chicken Filling: • 500g minced chicken • 2 large onions, chopped • 1 bowl chopped spring onions • 2 teaspoons ginger paste • 2 teaspoons garlic paste • 2 teaspoons salt • 2 and half tablespoons dark soy sauce • ¼ cup+ 3 tbsp = 7 tablespoons oil (any vegetables oil) For the Dough (Outer Layer): • 2 cups all-purpose flour • 1 curd • 1 teaspoon salt • 2 teaspoons of baking powder • 1/2 teaspoon of baking soda For Steaming: • Oil (for greasing the steamer) • Boiling water (for steaming)For Serving: • Spicy tomato chutney • Garlic chili oil Kneading the Dough: 1. Combine Dry Ingredients:In a large bowl, add 2 cups of all-purpose flour, 1 teaspoon of salt, 2 tablespoons of baking powder, 1/2 teaspoon of baking soda, Mix them together. 2. Add Curd:Pour in 1 cup of curd. 3. Mix Until Combined:Stir the flour and curd together with your hands or a spoon until a rough dough starts to form. 4. Knead the Dough:Once the dough begins to come together, transfer it to a clean surface. Sprinkle flour and Knead the dough with your palms for about 8-10 minutes until it becomes smooth. If the dough feels sticky, add a little flour. 5. Rest the Dough Once done cover with cling wrap and rest the dough for an hour. The buns are typically made with yeast and flour, I prefer to add curd to make them spongy and soft. Chicken filling: 1. Let’s move on to the chicken filling. Take 500 grams of chicken, two large chopped onions, a bowl of chopped spring onions, two teaspoons of ginger paste, and two teaspoons of garlic paste. 2. In a bowl, add the minced chicken, followed by the chopped onions and spring onions. I’m keeping some spring onions aside to use later if needed. 3. Next, add two teaspoons of salt, two teaspoons of ginger paste, two teaspoons of garlic paste, one and a half tablespoons of dark soy sauce, and a quarter cup of oil. Mix everything well until fully combined. 4. Now, add the remaining chopped onions along with a tablespoon of dark soy sauce and 2–3 tablespoons of oil. Mix everything well and set it aside. 5. Let’s move on to making the outer layer of the Thypo. Our dough is ready, take a portion and shape it into a smooth, round ball. Then, roll it out into a circular disk, keeping it thick since the dough will rise. 6. The size of the disk is similar to that of a puri, making it nearly three times larger than a regular momo. 7. Once you’ve rolled the dough to the desired thickness, move on to the next step. Place two full tablespoons of chicken filling in the center of the disk. Before wrapping, gently stretch all sides of the disk to ensure a better seal and shape. Wrap the Taipo in any simple design you prefer. Make sure to seal it properly, as it may open at the top while rising during steaming. Generally, in Taipo, pieces of hard-boiled eggs are added to the filling. However, I’m not adding eggs to my chicken filling today. If you like eggs, feel free to add them along with the chicken filling. If not, simply skip the egg and add extra chicken filling instead. 8. Now, the Taipo are ready to be steamed. Grease your steamer before placing them inside to prevent sticking. Arrange the Thypo in the steamer, then place it over a pot of boiling water. Cover with a lid and let them steam for 12 to 15 minutes. 9. After 15 minutes, the Thypo are fully cooked and ready to be served. 10. Serve hot with spicy tomato chutney and a drizzle of garlic chili oil for extra flavor.
