This package represents the epitome of what Side Project is, sharing the whole brewery in one understanding of who we are. Cory explains the philosophy behind BBT: focusing on making monster barrel-aged stouts in their own way, showcasing their ability to create a great base beer that stands by itself without needing adjuncts like vanilla or cocoa. This year Beer : Barrel : Time is exceptional, as every barrel selected for the blend was from Willlet. The beer, aged predominantly for 21 to 25 months (with a range of 16 to 25 months), develops deep, complex flavors including chocolate, coffee, caramels, mocha, and coconut. BBT 2025 blends three distinct recipes: OWK, Vibes, and Omega, the latter of which brings a beautiful German chocolate cake note without the use of any adjuncts. The fall release package is complete with two other exemplary beers: Rye BBT and Tête de Cuvée. The non-adjuncted Imperial Stout, Rye BBT, was aged exclusively in Willlet rye barrels. This bottling showcases the crucial role of the barrel, offering a taste completely different from the regular BBT. The blend for Rye BBT used Vibes, OWK, and Generational—a recipe designed to offer a lighter mouthfeel that allows the potent rye barrel characteristics to truly shine. Finally, the package includes Tête de Cuvée Vintage 2024, which is Side Project's pinnacle Missouri Saison. Tête is a blend of one, two, and three-year-old barrel-aged saison components, designed to create a fresh, vibrant note alongside deep complexities that can only be achieved with time.
