AI Adoption - What Restaurant Leaders Get Wrong. The Restaurant Technology Network (RTN) Town Hall consensus from restaurant leaders at Shelby’s Canada, Hofman Hospitality, and Thrive Restaurant Group was clear: If you’re chasing shiny AI demos without a data strategy, you’re just automating chaos. Here are five take-aways for getting started now (and BONUS tip: if you aren't getting started now, you're already behind...) 1. On AI Governance: You need a policy, now. Shadow AI is the new shadow IT. If you don't provide a licensed, secure AI environment (Enterprise Gemini/Claude), your GMs and marketers will use free public tools, and your proprietary data will be all over the place. 2. On Where to Start: Use AI Internally first to create a buffer. Panelists urged a back-office first approach. Don't put a bot in front of a customer who can complain; put it in front of a manager to help them schedule better. 3. On Data Infrastructure: Stop trying to clean all your data at once. Focus on a few specific use cases (e.g., labor forecasting) and clean only the data required for those. 4. On AI Definitions: "AI-Ready" means nothing if your definitions are messy. If you ask an AI for "Check Average," but you haven't defined if that includes tax, tips, or promos, you'll get 15 different answers. You must define your "Ontology" (what terms mean mathematically) before the AI can give you a real answer. 5. The "C-Suite Gap". Education is not optional. AI adoption fails when it is treated as a "Tech Project." Successful brands are putting their entire executive team through structured AI bootcamps. Leadership must understand the difference between traditional machine learning and generative AI to set realistic ROI expectations.
