Let’s take a look at what a country loaf from Tartine Bakery in San Francisco looks like. I was in town for a few days, but there was only one day I would have time to hit the bakery. I arrived at 4:57 right before they were closing, they actually closed the doors right after I walked in. All I wanted was to get a country loaf so I would have something to compare my own loaves to. But the country loaf section was empty. I asked them if they had any left and they said they didn’t, but then someone shouted from the back that they had a half a loaf if I wanted that. I grabbed it, but we were headed to dinner, so I packed it in my carry-on luggage and didn’t cut into it until I got back home. First of all the crust was perfect and the crumb had a perfect distribution of medium and small holes. The half loaf was 6 inches long, so the full loaf is a whole footlong. The width was almost 8 inches and it was about 3 inches tall. It didn’t have a big ear, it looks like they score it directly straight down the middle, which I like because the shape ends up being better for sandwiches. The hollow bump sounded nice and it felt lighter than it looked. This is day old bread at this point, but it still tasted amazing. The crumb pulled apart nicely and it was still moist. The high quality flours and the ratio of white to wheat makes it really delicious. I’m so glad I got to experience this loaf and it's inspired me to keep trying to perfect my own.
