The preparation involves simmering various types of fresh beef offal—such as tripe, intestines, lung, omasum, and brisket—over a low fire for an extended period in a clear soup base. This broth is meticulously prepared with spices like star anise, tsaoko (Chinese black cardamom), cinnamon, and dried tangerine peel.
