#wholefoodplantbased #chefjulia #bestbreakfastcookie Breakfast Cookies Preheat oven to 350° 1 1/2 cups almond flour 1 1/2 cups rolled oats 1/2 cup coconut, processed in the food processor until finely ground 1 teaspoon baking powder 1/2 teaspoon salt 2 tablespoons ground flax seeds mixed with 5 tablespoons water 3/4 cup peanut butter or almond butter 1/2 cup date syrup ¼ cup maple syrup (or 1/2 cup maple syrup and 1/4 cup date syrup or 1/2 cup only date syrup) 1 teaspoon vanilla extract or vanilla powder 1 cup chopped walnuts (or pecans, sunflower seeds or any nuts/seeds) 1/2 cup dried fruit such as cranberries, raisins, cherries, golden sultan raisins OR 1/2 cup dark chocolate chips For this recipe I used 73.5% Dark Chocolate from Chocolates El Rey in Stonewall, Texas. Order on their website. Mix the almond butter, date/maple syrup, and vanilla extract with the flax/water mixture. In a separate bowl mix the almond flour with the baking powder and salt. Whisk well. Add the oats and coconut. Mix with the almond butter/syrup mixture. Add the nuts and dried fruit or chocolate. Chill the dough for 20 minutes or longer. On a parchment lined baking sheet measure out ¼ cup or 1/3 cup portions of dough, depending on how large you like the cookies. 1/3 cup portions will make 12 cookies. Flatten with wet fingers. Bake for 15-16 minutes. Waif for 5 minutes before removing them to a rack. These cookies freeze well.
