Peel potato, onion and garlic. Chop potato into small chunks. Chop onion and garlic. 2. To the INSTANT POT, add potatoes, onion, garlic, lentils, split peas, bouillon, dried spices and water and stir. Add tomatoes, coconut nectar, bay leaves. Stir gently. Close the lid and set to HIGH pressure for 25 minutes. Allow 10 minutes of natural pressure. Perform a quick release. Reserve a cup or two of the chunky mixture for topping each serving of soup (if desired). Add coconut milk and greens. Using an immersion blender blend to desired consistency (transfer to a blender if desired). To serve, top each bowl with a few tablespoons of reserved mixture, a drizzle of coconut milk and fresh parsley. Enjoy!
