Mandarin Orange Crème Brulee Serves: 2 – 4 people Prep: 20 minutes Cooking Time: 20 minutes Total Time 40 minutes Equipment 1 mixing bowl 4-6 ramekins 1 silicone spatula Plastic wrap 1 baking rack 1 pyrex or large baking tray Optional: 1 torch Pre-heat the oven 275 F˚ Mandarin Custard (double the recipe written down then for filming) 4 (68 g) egg yolks (2/3 cup) 134 g sugar 2 cups (160 g) heavy cream 20 g milk 40 g orange juice (1 juice of a Madeiran orange) ¼ tsp (1 g) ground ginger 1/4 tsp (1 g) ground cardamom 1/8 tsp (.5 g) salt ½ tsp (2.1 g) vanilla 1 mandarin orange (zested & juiced) (Optional) Brown sugar for a nice caramel finish 1. In a small pot, add the heavy cream, milk, orange juice & zest, sugar, ground ginger, ground cardamom, and salt. Heat until hot then add vanilla extract. 2. Whisk in the egg yolks then pour in 4 equal-sized ramekins and bake at 275 F˚ for 1 hr and 30 minutes. Add a large dish of water and bake these custards in a ramekin in a water bath. 3. Remove the ramekins from the oven and allow to cool before refrigeration them for a few hours to firm up 4. Sprinkle an even coating of brown or regular sugar on top and caramelize the top for a few minutes on broil in the oven or use a blow torch.
