Appleton airport announces new restaurant, shops with local flavor

Travelers moving through Appleton International Airport will be able to get a taste of the Fox Valley starting this summer. Airport officials are announcing plans to partner with Appleton-based Copper Rock Coffee Company to create the Grain & Grind Coffee & Deli. It will replace the current restaurant in the concourse. Menu items will include Copper Rock specialty coffees, with the restaurant offering breakfast items, sandwiches, salads and cocktails. Meanwhile, the airport is also planning to expand express marts in the terminal. North River Express will be located before security, and North River Trading Co. will be located after security on the new concourse. They are set to feature travel necessities and gift items unique to the Fox Valley and Wisconsin. They are all expected to open this summer.
