In this video, I show you how to make perfect Jamaican Festival, everytime! Recipe Yields 24 Festival: Dry Ingredients: 3 cups All Purpose Flour 1 cup fine Cornmeal 1/2 cup Sugar 4 tsps Baking Powder 1 tbsp Cinnamon 1 tsp Nutmeg 1 tsp salt Wet Ingredients: 1.5 Cups Milk 2 tbsp Vanilla Vegetable Oil for frying Directions: Combine all dry ingredients in a large bowl and mix together thoroughly. In a measuring cup, add milk, vanilla and stir. Next, slowly add your milk mixture to your dry ingredients. Bring dough together gradually and be careful not to overmix. The dough is done once it has reached a soft, slighlty moist texture. Cover and let rest for 30 minutes. Meanwhile, add your vegetable oil to a non-stick pan. Approximately 1 inch of oil. Heat oil over Medium-Low heat. Next, uncover your festival dough and roll out equal sized portions. Place your festivals in the hot oil and allow to cook for approximately 6-7 minutes or until the colour has come up half way on the festival. Flip festivals using metal tongs and allow to cook for an additional 5 minutes. Remove festivals from heat and place in a paper towel lined dish, allowing excess oil to drain off. Cool and Enjoy!
