Soaked rajma ready? Let’s make magic. Sauté onions, ginger, and garlic till golden. Add tomatoes and spices, cook till the masala releases oil. Now add the soaked rajma with water, pressure cook till soft and creamy. Finish with kasuri methi, butter, and fresh coriander. Pure comfort in one bowl. Serve this Rajma Masala with plain rice, jeera rice, roti’s, naan’s, chapati or paratha. Ingredients • 1 cup rajma (soaked overnight) • 2 medium onions, (sliced) • 2 tomatoes, chopped or puréed • 10 cloves of garlic (crushed) • 1 inch ginger (julienne) • 2-3 green chilies (chopped) • 1 sprig of curry leaves (chopped) • 1-2 Bay leaves • 2 tbsp oil or ghee • 1 tsp cumin seeds • 1 tsp turmeric • 1–1.5 tsp red chilli powder • ½ tsp garam masala • 1 tbsp kasuri methi • Salt to taste • 3–4 cups water (adjust for thickness) • Fresh coriander for garnish • ½ lemon juice Method • Heat oil in a pressure cooker. • Add cumin seeds, let it splutter. The add crushed garlic & julienne of ginger allow it to roast for a while. • Add onions with chopped curry leaves and sauté onions until translucent. • Add tomatoes and cook until soft. • Mix in turmeric, red chilli powder, and salt. • Cook until the masala thickens and oil starts separating. • Add the soaked rajma directly into the masala. • Pour in water and mix well. • Close the lid and cook for 6–8 whistles on medium heat. • Let the pressure be released naturally. • Check if rajma is soft; simmer longer if needed. • Add chopped fresh coriander leaves and crushed kasuri methi. • Simmer for 5 minutes to bring everything together. • Squeeze lemon juice if required. • Garnish with fresh coriander. • Serve hot with steamed rice or rotis.
